Okay, by now you all know I love food and I love simple recipes that align with my nutrition knowledge: meals that are well-balanced, filled with a multitude of veggies and can be made in no time! Whether you're doing a single serving or feeding a family of six, this Lo Mein is delicious, inexpensive, versatile and so comforting. It takes very little time- which I know is a must for those of us who just feel like collapsing with some food as soon as we get home and it is so easy to make, if you don't enjoy cooking or are trying to cook more, this is a great recipe to start with. More easy recipes to come... be on the lookout! Recipe: Ingredients:
8oz of Wide Lo Mein Noodles 1/2 Teaspoon Sesame Oil 1 Teaspoon Canola Oil 1 Tablespoon Oyster Sauce 1 Tablespoon Soy Sauce 1 Tablespoon Sriracha *optional* 3 thinly sliced chicken breasts 1 Teaspoon minced ginger 2 cloves minced garlic 1/2 onion thinly sliced 1 carrot thinly sliced 2 bunches bok choy 1 scallion chopped 1/2 cup shredded cabbage 1/2 cup bean sprouts Salt and pepper to taste 1) Cook the noodles until *al dente* and set aside along with a small amount of water from the noodle pot 2) Heat canola oil and sesame oil on medium heat in wok or large skillet until fragrant 3) Add minced garlic, ginger, onion and stir. Let it sauté for a minute. 4) Add in chicken and cook through (5-7 minutes depending on thickness). If desired, season chicken lightly with salt and pepper 5) Add in bok choy, cabbage, carrots and sprouts until it starts to soften 6) Add in soy sauce, oyster sauce, sriracha and toss 7) Add cooked noodles, toss it altogether 8) Add scallions to the top *Adjust measurements depending on how many you're feeding (This recipe usually feeds 3 people) And you're done! Altogether, this meal takes me about 20 minutes to cook; including the time it takes for the water to boil and to chop everything. It is simple and delicious and you can add whatever protein or veggies you like! If you give it a try, let me know! You will not regret it :)

I know this life, at times, can be challenging- impossible even. But remember this whenever you feel the weight of the world on your shoulders: lean in. Every goddamned minute of it. It’s not about those “big moments” we anticipate so much that we don’t even realize when they happen. This is life. It’s loving the idea of being at work because your coworker made cookies for you and because you know no one is too serious. This is life. It’s being excited about getting paid then cooking the meal you’re craving. This is life. It's about getting to see your best friends and sit on a park bench and talk for hours about everything and nothing. This is life. The small moments that provide so much joy that we look back upon and realize they are the big things.
There are big events in our lives but these moments that we live every single day is life. If it’s not life, then what is it? Why is it that so often we look upon these moments as a hinderance? As a hurdle to pass to get to a destination we're not even sure we'll reach? As things that don’t matter when in fact they’re the things that matter most? Being excited about the small things is no doubt the essence of life because we’re appreciating it- every fucking moment. It’s not dreading the week every Sunday and hating every Monday. It’s not being upset that we have to work and then go home to cook dinner. It's not saving up and waiting for a vacation as an "escape" only to land back in "reality" a few days later. If we view things like that, life is truly passing us by. Life is about riding the wave- whatever comes at us-then once again realizing how much the little things make us happy, how life is made up of all those little things, how this is life. |
